A quick but delicious snack, a great way to use up leftover tortilla or just fill up empty tummies after a day at school.

Ingredients

  • 8 tortillas
  • 4 floz oil

Cinnamon Sugar

  • 2 tsp cinnamon powder
  • 4 tbsp caster sugar

    Preparing the tortillas

    • Place the tortillas on a chopping board in a pile.
    • Cut the tortillas into triangles.
    • Put oil into a deep frying pan, no more than 1/3 full. Heat it up to 350°F
    • Carefully place 4 or 5 triangles in the hot oil, turn over after 20 seconds, lift out after another 20 seconds.
    • Place on kitchen paper, set on a wire rack.
    • Move quickly to the bowl of cinnamon sugar.

    Preparing the cinnamon sugar

    • Mix the sugar and cinnamon together in a bowl, I like to use a hand whisk. Once it is a consistent shade, it is ready to use.

    Ingredients

    • 1 cup Oats
    • 1/3 cup Honey
    • 1/2 cup Natural Peanut Butter
    • 1 cup Shredded Coconut
    • 1 Square of Milk or Dark Chocolate
    • 2 Scoops of Chocolate Protein Powder

    • Combine all the ingredients in a large bowl. Mix together with a spoon.
    • Roll into balls and place on a plate covered in wax paper.
    • Top the plate with aluminum foil and place balls in refrigerator for 30 minutes before consuming.

    Blackcurrant Crumble

    Ingredients

    Main

    • 16 oz Blackcurrants
    • 2 tbsp Sugar

    Crumble Topping

    • 8 oz Plain Flour (I prefer whole wheat flour)
    • 5 oz Brown Sugar
    • 3 oz Butter (room temperature)
    • 1 tsp Baking Powder (level teaspoon)

    Instructions

    • Place the flour in a large bowl, add baking powder (I mix with a balloon whisk).
    • Add butter and rub into the flow lightly, using fingertips. Rub until it looks like breadcrumbs.
    • Add the sugar and combine until evenly mixed. Your topping is now ready.
    • Place the blackcurrants (fruit) into a deep dish, put the crumble on top. Bake at 350 degrees Farenheit for 30-40 minutes.

    Ingredients

    • 4 oz All Purpose Flour
    • 10 oz Milk
    • 1 Egg
    • 1 pinch Salt

    Method

    • Put the flour in a medium bowl.
    • Add egg and start beating (an electric hand mixer makes this easy and quick).
    • Start adding milk slowly, each time you add milk, fully incorporate it, before adding more – this will prevent lumps.
    • Once all added, let stand while you get your pancake pan/frying pan hot on the stove. It is important that the pan is hot.
    • Add oil, add a ladle of mixture and tilt pan back and forth to cover the whole surface. Once air pockets appear turn over and cook the other side. Repeat.

    Tips

    • Crepes are thin, so cook quickly – make sure the pan is hot and your attention is focused.

    Serve

    • These are great with jam or fresh fruit such as blueberries and bananas.

    Scottish Pancakes

    Ingredients

    • 4 oz S.R. Flour
    • 1 oz Sugar
    • 1 Egg
    • 5 oz Milk

    Instructions

    • Combine all the ingredients together into a thick batter. An electric hand mixture is brilliant for this.
    • Warm the griddle or frying pan to a medium/high heat.
    • Wipe the cooking surface with a kitchen towel.
    • Add a tablespoon of mixture to create individual pancakes. When you see pin prick size bubbles turn over. Cook the other side for about 30 secs.
    • Serve – My children like pancake or maple syrup. I grew up having chocolate sauce, it is your choice as always. *Tip: Delicious with savory topping like cream cheese and small salmon.

    Ingredients

    • 1 1/4 cup Flour
    • 1 tbsp Baking powder
    • 1 tbsp Sugar
    • 1 pinch Salt
    • 1 Beaten Egg
    • 1 cup Milk
    • 2 tbsp Oil

    Instructions

    • 1. In a large bowl, sift together the flour, baking powder, salt and sugar.
    • Make a well in the center and pour in the milk, egg and oil. Mix until smooth.
    • Heat a lightly oiled frying pan over medium heat. Pour the batter in the pan. Brown on both sides and serve with butter and syrup if preferred.
